The Starward Distillery's history dates back to 2007, when founder David Vitale had the idea of ​​creating a unique Australian whiskey distillery. Vitale was disillusioned with conventional Scotch whiskeys and looked for a way to produce a whiskey that reflected Australian tastes and climate.

In 2013, Starward Distillery opened its doors in the industrial Port Melbourne district.
