Baby Jane Widow Jane Bourbon
Baby Jane is a small-batch blend of bourbons distilled in Brooklyn and Kentucky. At its heart is a specially developed heirloom corn variety, also named "Baby Jane." It was created from Bloody Butcher Red and Wapsie Valley Yellow Corn. The bourbons used are aged for four to six years in new, charred American oak barrels. It is bottled non-chill filtered at 45.5% ABV; mineral-rich water from the Rosendale Mines in New York State is used to adjust the drinking strength.
The nose reveals honeycomb, cream soda, a slightly salty note, and green grapes. On the palate, there's caffè latte, strawberry cream toffee, salted caramel, fresh fig, allspice, and a herbaceous, tart accent of raspberry leaves. The long finish combines peach compote, star anise, dried hay, horchata, soft pretzel, and milk chocolate.
A complex bourbon, characterized by its special corn variety, creamy sweetness, and spicy contrasts.
