St.Kilian Solera II Unpeated
The whisky was carefully crafted and went through all three stages of the St. Kilian Solera system. The final maturation stage took place exclusively in Pedro Ximénez sherry casks, which gave the whisky a unique aroma and flavor profile. In the row of casks above, the 1st Criadera, barrique casks were used that had previously been filled with medium sherry made from Pedro Ximénez grapes. These casks gave the whisky a subtle taste of sherry and gave it a unique depth and complexity.
The top row of casks, the 2nd Criadera, was made from the finest Manzanilla sherry casks filled with mild whisky that had been matured in fresh American white oak casks. This gave the whisky a hint of vanilla and oak that harmonized perfectly with the sweet sherry aroma.
