For this range of first bottlings we have used malted barley from Concerto and water from our own well. The malt is peated in the kiln to 50 ppm. We receive it, shred it, and stir it in our mash tun to create a cloudy wort that delivers an oilier, more robust flavor. Our chosen yeast and fermentation time allows us to create the full bodied flavor we are looking for in our distillation. We then distill twice, almost twice as fast from Lochranza, in our handcrafted copper pot stills. The spirit for this release was matured in first fill ex-bourbon casks for just over three years prior to release. It has been bottled chill filtered, with no added coloring and at the higher strength of 50% ABV. A very characterful dram with notes of citrus, heather and campfire smoke.
