Isle of Harris Gin
Isle of Harris Gin is an exclusive gin distilled in small batches using an affectionately named copper still called "The Dottach". This still is named after a fiery and spirited local woman who serves as the inspiration for the production of this unique gin.
The special flavor profile of the Isle of Harris Gin is based on a subtle coastal note, which is created by the use of sugar kelp as one of the main botanicals. This is harvested by a diver in the local underwater forests of the Outer Hebrides, adding to the uniqueness of the gin.
Another highlight of Isle of Harris Gin is the production process, which differs significantly from that of many other gin manufacturers. The pre- and post-distillation run are not re-distilled in subsequent distillation processes, but are completely removed. Although this is expensive, it contributes significantly to the exceptional smoothness and purity of the taste.
