The employees of the Nc'nean distillery, who call themselves "rebels," are honored each autumn with a limited special edition of Nc'nean whisky. This year, the focus is on distiller Simon Hewitt. A trained chef and beer sommelier, his journey took him from North America and New Zealand to the Highlands and Nc'nean. Fittingly, this Rebels bottling, after its initial maturation in STR red wine casks, received a finish in Innis & Gunn oatmeal stout beer casks. The single malt impresses with a buttery, slightly chocolatey note and hints of cherry jam, bottled at 48.5% ABV. Sustainability and ecological principles are a central part of Nc'nean's philosophy.
