Because in 2026, Phil and Simon Thompson will be moving into the state-of-the-art buildings of their new Struie Distillery.
The brothers discovered their passion for whisky in their parents' hotel business: At Dornoch Castle, they established a whisky bar that became known far beyond the borders of the Highlands. As independent bottlers, they made a name for themselves with hand-picked bottlings like these:
