The Glenlivet Distillery dates back to 1824, when George Smith established the first legal distillery in the Speyside region. At that time, illegal distilling was widespread in Scotland, and George was one of the first to produce under a license. This brought him not only recognition, but also some trouble, as not all bootleggers were happy with his decision.
With courage and vision, George Smith prevailed and laid the foundation for what is now considered one of the world's most famous single malt whiskies. Glenlivet is often referred to as the "single malt that started it all" – a tribute to its role in whisky history.
The manufacturing methods
One of the secrets to Glenlivet's success is undoubtedly its meticulous production process. Here's a look at what makes Glenlivet so special:
1.Pure spring water
Josie's Well, deep in the hills of Speyside, provides the crystal-clear water used for Glenlivet's whiskies. This water plays a central role in the flavor and consistency of the bottlings.
2.Malt and mash
The process begins with malted barley, which is mixed with hot water in special mash tuns. This step releases sugar, which is later converted into alcohol through fermentation.
3.Traditional fermentation
The sugar solution, called "wort," is placed in large wooden fermentation vats. There, with the help of yeast, it ferments into an alcoholic liquid called "wash." This process gives the whisky its fruity character.
4.copper stills
This is where another hallmark of Glenlivet production comes into play. The distillery uses tall copper stills, which give the distillates their smooth and elegant style. The clear "new make spirit" already possesses many of Glenlivet's signature aromas at this point.
5.Maturation in oak barrels
After the raw spirit is distilled, it matures in carefully selected oak casks, often American white oak or sherry casks. These woods impart the whisky's signature vanilla, caramel, and fruity notes that make Glenlivet so unique.
