Collection: Daftmill

The Daftmill Distillery is one of Scotland's smallest and most exclusive whisky distilleries. Located in the Lowlands near Cupar in the Fife region, it was founded in 2005 by brothers Francis and Ian Cuthbert. The distillery is part of a traditional family business that has been farming for generations.

Daftmill is a true farm distillery: All the barley for the whisky is grown on the farm, and the water comes from an on-site artesian well. Production takes place exclusively during the less busy farming season—about two months each in summer and winter. This means only around 100 barrels are produced annually, equivalent to approximately 20,000 liters of alcohol.

Distillation is traditionally carried out in small copper stills made by Forsyths in Rothes. Particular attention is paid to a clear wort, long fermentation times of up to 104 hours, and a precise cut to produce a light, fruity Lowland style.

Daftmill Distillery: Everything you need to know

Daftmill may not yet be as well-known as other Scottish distilleries, but that's precisely what makes it so special. This small, family-run distillery has earned its place in the whisky world with exceptional quality, traditional production methods, and a fascinating history.

Whether you're a whisky novice or a budding connoisseur, we offer a comprehensive overview of Daftmill, from its history to the ins and outs of its production to the products that make it so unique.

A brief history of the Daftmill Distillery

Located in the Fife region of Scotland, Daftmill is nestled in the picturesque landscape of a working farm. It is owned by the Cuthbert family, now in its sixth generation. Although officially opened in 2005, the idea of distilling on the farm dates back a long way.

  • The origin of the name:The name "Daftmill" is derived from a nearby stream, whose flowing water was often associated with mill wheels.
  • Authenticity meets devotion:Unlike large distilleries, Daftmill focuses on modesty and quality. The distillery produces only between 100 and 120 barrels of whisky per year, making it a true "micro-distillery."

This focus on small batches and quality over quantity has been the distillery's trademark since its opening.

Traditional production at the highest level

Daftmill stands out for its extremely artisanal and traditional production. The distillery follows a few basic principles that are worth explaining in more detail.

1.Homegrown barley

The distillery uses only barley grown on its own family farm. This not only ensures full control over the quality of the raw materials, but also contributes to the authenticity of the whisky.

  • Sustainability and control:From sowing to harvest, every phase is monitored to ensure the quality of malt production.
  • Regionality:The barley is malted nearby to ensure short transport routes and freshness.

2.Spring and autumn production

Unlike many distilleries that produce year-round, Daftmill only distills twice a year: once in spring (Spring Season) and once in autumn (Autumn Season).

  • Why these periods?:The rest of the year, the family devotes itself to farming. This rhythm ensures that distillation is integrated into the farm's natural cycles.
  • Exclusive vintage bottlings:These seasonal productions often result in vintage whiskies that are in high demand among collectors.

3.Long maturation period

Daftmill whiskies mature in high-quality oak casks, often former bourbon casks, for at least 12 years. These long maturation periods ensure a balanced and complex flavor profile.

What makes Daftmill whiskies so special?

Now you're probably wondering: What sets Daftmill whiskies apart from the crowd? Here are some of the characteristics that make them unique.

  • Fruity elegance:Daftmill whiskies are characterized by their mild, fruity notes, with aromas of green apple, pear and honey.
  • Exclusivity:Due to the small production volume, Daftmill whiskies are often difficult to obtain. Each bottle therefore carries a high collector's value.
