Dalmore 15 years
Dalmore whiskies are distilled in four pairs of copper stills. A special feature of the spirit stills is the water cooling between the neck and a reflux ball, which increases the reflux and thus produces a milder, lighter whisky.
The true highlight of the Dalmore 15 Year Old, however, lies in its maturation in oak casks. The malt first spends 12 years in American ex-bourbon barrels before receiving a three-year finish in three different types of sherry casks: Amoroso Sherry, Apostoles Sherry, and Matusalem Oloroso Sherry. Particularly impressive is the choice of sherry varieties, which differ from the usual standards of Scottish whisky distilleries. Apostoles and Matusalem are sherries that have been aged for 30 years using the solera method, imparting exceptional depth and complexity to the whisky.
