For this third release in the series, the team have worked with Knockrath Estate in Co. Wicklow to sustainably harvest 7 Irish oak trees. Each of them has matured selected Midleton Whiskeys between 13 and 26 years. These are single pot still whiskeys, first matured in traditional American oak bourbon casks before being racked into native Irish oak. tree 3
Tasting Notes
Nose: Pot still spices are accented by the contribution of Irish oak adding waves of toasted wood with hints of vanilla and roasted coffee, overlaid with fresh fruit evolving from orchard fruit to tropical notes.
Palate: Classic pot still spices bring rich texture to the fore, while Irish oak influence adds a medley of sweet notes like chocolate and honeycomb.
Finish: Remarkably long finish with fading fruit and spice to allow the Irish oak to have the last word.
