This barrel aging gives the wine a complex structure and additional flavor. The use of microscopic plots for the grape harvest allows for the purest expression of Malbec. After the hand-picked harvest, the grapes are transported directly to the winery, where they are gently destemmed and macerated separately. This process takes place at low temperatures to delay fermentation and ensure optimal color and intense aromatics.
